We’re sure there will be a Keto cafe in no time, but for now you can make this one at home.  A super yummy Caprese Omelette!


2 Tablespoons of Olive Oil

6 Eggs

120 Grams of Cherry Tomatoes, halved.

½ Cup of fresh basil

½ Cup of mozzarella

Salt & Pepper to taste

Optional Ingredients: Other cheese such as provolone or pecorino will work, as will some bacon to top it at the end!


  1. Crack the eggs into a mixing bowl and season with salt and pepper, then continue to beat with a fork until fully combined, then proceed to add basil.
  2. Half the tomatoes and tear the mozzarella.
  3. Heat the oil in a large frying pan, fry the tomatoes for a few minutes until slightly soft and blistered.
  4. Pour the egg mix on top and let it firm up before adding the mozzarella.
  5. Lower the heat until completely firm, then serve up and ENJOY!
