We’re sure there will be a Keto cafe in no time, but for now you can make this one at home. A super yummy Caprese Omelette!
Ingredients
2 Tablespoons of Olive Oil
6 Eggs
120 Grams of Cherry Tomatoes, halved.
½ Cup of fresh basil
½ Cup of mozzarella
Salt & Pepper to taste
Optional Ingredients: Other cheese such as provolone or pecorino will work, as will some bacon to top it at the end!
Instructions
- Crack the eggs into a mixing bowl and season with salt and pepper, then continue to beat with a fork until fully combined, then proceed to add basil.
- Half the tomatoes and tear the mozzarella.
- Heat the oil in a large frying pan, fry the tomatoes for a few minutes until slightly soft and blistered.
- Pour the egg mix on top and let it firm up before adding the mozzarella.
- Lower the heat until completely firm, then serve up and ENJOY!
