We get it. You love rice, bread and all those other things you’ve had in your diet forever. However, there are some truly genius ways to substitute these foods for something that is almost the same but healthier. One of our favourite staples is rice… but not the standard white or brown rice… it’s Cauliflower rice. Yep, you read that correctly – rice made out of Cauliflower. How’s it done?

1 large cauliflower

Wash and dry the cauliflower, remove stems and cut into manageable pieces (for grating).

With a grater, use the med-size holes or a food-processor with a grater attachment, to grate the cauliflower into rice sized portions (again, avoid the stems here). Or, place the florrets into a blender and blitz for 5 seconds (much easier and quicker!).

Once that’s all done, fry it up in a large skillet with Olive or Coconut Oil. Covering it with a lid will make it more tender and rice-like! Cook for 5-10 minutes adding any seasoning you’d like. You can use this recipe as a side or a main ingredient when making Keto-friendly recipes.
